Hi Dave,
Hum...I don't know and don't have an iPhone to test with.
If you can get to the actual XML configuration file, the manual suggests
there are level settings. See the "audio" section of this document:
http://www.zoiper.com/documentation/Zoiper_3_Configuration_File.pdf
I have no idea if any of this info will help---just shooting in the dark!
