Thunderbird email does this very well also.
Look up "Message Filters" under Tools.

In addition to the standard Inbox, Sent, Drafts, Junk and
Trash folders I have about 35-40 incoming folders, one per
mailing list (ham radio lists like this one), plus sheriffs
volunteering, red cross volunteering, and few other
miscellaneous topics.
