There would be no real advantage to doing that and some disadvantages. Once the BBB boots most all of its operation is in RAM. At times there are reads from the SD card but few writes. So there would be no speed advantage except maybe slightly at boot. I am not sure there really is a speed advantage anyway with our now faster SD cards. Another concern would be if you had the code on emmc and it failed you would have to put an SD card in anyway.
Having the code on the SD card and easily removable makes like easier. If it fails, and that is rare, or you want to change code you just pop another card in. In short putting the code on emmc would just make things more difficult.
