I actually do run IAXrpt on my Mac and it works quite well. You use WINE to give you the APIs that allow it. The setup is not difficult but not totally straight forward.

To launch the program, instead of navigating down to an obscure directory, I have written some executable start-up scripts and placed them in my Applications folder. To use WINE you really must be at least minimally comfortable with Terminal and command line.
If you do go with Zoiper, use the phone application setup, not the IAXrpt setup. I have not been able to make the mic on Zoiper (on the Mac - works fine on my phone) send audio to AllStar, even though the activity bar shows audio coming in. IAXrpt running under WINE works FB. The same should be true of Linux.
