Luc,

 Here is a link to setting up logger.conf in /etc/asterisk.  You have to
tell it where to put the logs. In your case it would be
/media/usb-stick-name/directory

Of course you would have to specify the correct names.  The USB stick name
and the directory name which you must create on the usb stick to put the
logs in.
