John,

 You did not say what you wanted parrot mode for. The described methods
work and allow you to do it remotely via DTMF but if you just want feedback
of your audio to check settings or how you are getting into your node the
echo mode (C) in simpleusb-tune-menu is a quick way to do it. It just
toggles. People often set that to enabled on an unconnected simplex node
and drive around to see what their coverage sounds like. It repeats back
until disabled.
